Vegetable Pasta

INGREDIENTS

• 1 cup pasta (semolina/ whole-wheat)
• 1 cup vegetables (mushroom, bell peppers, sweet corns)
• ¼ cup tomato puree
• ½ onion
• 1 spoon ginger-garlic paste
• Black pepper to taste
• ½ finely chopped green chilli
• Salt to taste
• Cumin seeds – ½ tsp
• Oil – 1 spoon
• Freshly chopped coriander and mint

STEPS

1. Boil and strain the pasta.

2. In a kadhai, pour the oil and add cumin seeds. Let it splutter.

3. Add onion. Once it turns transparent, add ginger-garlic paste and tomato puree, toss until the raw smell goes-off.

4. Add all the vegetables, salt, pepper and chillies one by one and toss well.

5. Add the boiled pasta, toss and mix the pasta well with the vegetables.

6. Garnish with coriander and mint leaves on top. Serve!
